Retort Formula Development
Retort processing changes a formula. Heat penetration, hold time, cooling rate, and package type all affect flavor, texture, color, and shelf stability. A coffee or latte that tastes right before retort can separate, darken, or lose aroma once it sees production heat.
We develop formulas specifically for retort conditions from the start. That means selecting ingredients that survive thermal processing and confirming compatibility with your chosen can, bottle, and closure before the first pilot run.
